Chinese Foddie #002: 锅巴土豆 (guoba tudou) / Rice Crust Potato Snack

Rice crust potatoes(锅巴土豆)is a famous snack on almost on every street in Chongqing and Sichuan Province. Harganya yang murah, penyajian yang cepat dan porsi yang tepat memang sangat cocok untuk menjadi pilihan pengganjal perut on the go.

Ingredients

3 potatoes 
1 shallot chopped
1 teaspoon salt
1 teaspoon Sichuan peppercorn powder
1 teaspoon chili pepper powder
1 tablespoon cooking oil
1 teaspoon sugar
 

Instructions

  1. Peel the skin of potatoes and cut them into small cubes. At the same time, wash and chop the shallot.
  2. Boil some water in wok; put the potato cubes in to cook for about 15 minutes. Get the cubes out and rinse in cold water.
  3. Heat up cooking oil in plan. Put the cooked potato cubes in to stir-fry until the outside become golden-brown, add all the condiment and seasonings in. Mix together.
  4. Sprinkle chopped shallots on top
