Ingredients
3 potatoes
1 shallot chopped
1 teaspoon salt
1 teaspoon Sichuan peppercorn powder
1 teaspoon chili pepper powder
1 tablespoon cooking oil
1 teaspoon sugar
1 teaspoon salt

Instructions
- Peel the skin of potatoes and cut them into small cubes. At the same time, wash and chop the shallot.
- Boil some water in wok; put the potato cubes in to cook for about 15 minutes. Get the cubes out and rinse in cold water.
- Heat up cooking oil in plan. Put the cooked potato cubes in to stir-fry until the outside become golden-brown, add all the condiment and seasonings in. Mix together.
- Sprinkle chopped shallots on top
